Chongqing cuisine centres on two pillars: hotpot and xiaomian noodles. Both rely on the same ingredients — dried chilies, Sichuan peppercorns, garlic, and ginger — but produce completely different experiences. Hotpot is a social, hours-long meal; xiaomian is breakfast eaten in five minutes at a street counter.
The city's food culture is fiercely local. Chongqing people insist their hotpot is categorically superior to the Chengdu version (oilier, more intensely spiced, traditionally made with tallow rather than vegetable oil). Street food is excellent throughout the city, with particularly good concentrations around Ciqikou ancient town, the Guanyinqiao area, and the Jiefangbei underground food streets.
