Phajja's, on GT Road near the Clock Tower, serves siri paye — slow-cooked goat head and trotters in a gravy thickened by overnight simmering. It is a Punjabi breakfast dish that you eat hot with kulcha or nan, and Phajja's is the most famous place in Gujranwala to try it. Open from early morning until the pot is empty — usually by mid-morning. It is rich, fatty and entirely unsubtle; this is part of the point.
