Rize's local cuisine is rich and distinctive. The Black Sea region has its own cooking tradition built around anchovies (hamsi), cornbread (mısır ekmeği), and muhlama — the molten cheese, butter, and cornmeal dish that is the local equivalent of fondue. Most restaurants in the city centre serve Turkish standards alongside Black Sea specialities.
