Samarkand's street shashlik is an experience in itself. Ask any taxi driver for the big shashlik spot and you will end up at an open-air grill serving enormous skewers of lamb, chicken, and flank steak over charcoal. The portions are generous, the prices are low, and the atmosphere is lively. Go with an appetite and a sense of adventure — some of the more mysterious cuts are best enjoyed without asking too many questions.
