The most contemporary of the better restaurants in Ribe, on the river bank near Skibbroen. Kolvig does a confident take on modern Danish cuisine with strong local sourcing — Wadden Sea seafood, salt-meadow lamb, root vegetables and pickled marsh herbs.
The dining room is in a converted seventeenth-century merchant house, with a small terrace on the river. The wine list is short and well-judged; the bill is significantly higher than at the old inns but still reasonable by Copenhagen standards. Reservations recommended.
