The dining room at the Castel Marie-Louise — one of La Baule's grand seafront hotels, set in a 1900 manor house — holds a Michelin star and is the most ambitious kitchen in town. Expect the kind of polished, classical French seafood cooking that the region is built on: turbot in beurre blanc, langoustines, sole meunière, all impeccably sourced.
