The Hof sausage-cart tradition, in continuous operation since 1871

The Wärschtla is what Hof eats when it eats on the street. A thin pork bratwurst boiled in a copper urn, lifted out with tongs, slid into a split bread roll, and topped with hot mustard and a slick of cooking broth. The carts that sell them — small blue and white wooden shacks on wheels — have been a fixture of the market square since the 1870s.

Three of the carts now operate around the city: on Maxplatz, near the Hauptbahnhof, and at the entrance to the Theresienstein park. A Wärschtla costs about three euros and is the right snack at any time of day. Eat it standing, with a paper napkin and a bottle of mineral water — the locals do.

The Wärschtlamo carts have been a feature of the Hof market since 1871. Each cart is independently owned and operated, and the small cooperative that manages them has resisted every attempt at corporate buy-out — most notoriously a serious offer in the 1990s from a national fast-food chain that wanted to franchise the format.
