Franconian cooking is heavier and meatier than the South Bavarian food most foreigners know — sausages, roasts, Klöße, and a great deal of beer. Hof's local speciality is the Wärschtla: a thin boiled bratwurst served on a bread roll with mustard, sold from blue-painted wooden carts that have been a fixture on the market square since the 19th century. There are still two or three of these carts in operation; pause at any of them.
