Il Richiasto is a long-standing trattoria in the old town that serves straightforward Viterbese cooking without pretension. The menu follows the seasons: in autumn expect pasta with porcini from the Cimini hills and slow-roasted pork with wild herbs; in spring there are artichokes from the volcanic plain and lamb. The acquacotta — the local peasant soup of vegetables, eggs, and Pecorino on stale bread — is reliably good year-round.
