The cooperative of Orbetello fishermen runs both a shop and a sit-down restaurant on the causeway leading into town. The shop sells bottarga, smoked eel and tuna, and tins of marinated lagoon fish that travel well. The restaurant next door is simple and busy at lunch — wooden tables, paper placemats, and a short menu that changes with the catch. The pasta with bottarga is the dish to order.
