Prato has one of the most interesting food scenes in Tuscany, combining traditional Pratese and Florentine cooking with an unusually good Chinese restaurant culture. The city's large Chinese community — the biggest in Italy — has meant that over thirty years of authentic Chinese cooking has developed here. This is not Italian-Chinese fusion; these are real Wenzhounese and Fujianese restaurants serving food you won't find elsewhere in Tuscany. Alongside this, traditional trattorie still do the proper local dishes: the biscotti di Prato with vin santo, ribollita, and bistecca.
