Harbour Herring Stalls

Herring stalls operate along the quayside in Oudeschild, selling the Dutch staple of nieuwe haring — raw, lightly salt-cured herring eaten whole (the traditional way, tipped back from the tail) or in a soft white roll with raw onion and pickle. This is one of the essential Dutch food experiences, and eating it on a working harbour quay rather than at a tourist market makes it better still.

The stalls also typically sell kibbeling (battered fried fish pieces), garnalen (Wadden Sea brown shrimp), and smoked eel. Opening hours follow the season: reliable from late spring through summer, more variable in shoulder months, often closed in winter.
