Monarh occupies a former monastery in the western part of Tilburg, and the high-ceilinged former chapel spaces give it a setting that few restaurants in the city can match. The cooking is Dutch-European — seasonal produce, careful sourcing, dishes that feel grounded rather than fashion-led. Prices are on the higher end for Tilburg but fair for the quality.

It's the kind of place that gets booked out for special occasions by locals, and that is generally a good sign. Booking ahead is sensible on a Friday or Saturday evening. The bar area in the former cloisters is also good for a drink before or after dinner.
