Vertshuset Røros is the most established restaurant in town, housed in a historic timber building on the main street. The kitchen focuses on local and regional ingredients — reindeer, elk, Arctic char, and seasonal game — prepared in a style that combines Norwegian tradition with contemporary technique. The reindeer dishes in particular are worth trying: the animals graze on the surrounding plateau, and the flavour reflects the landscape.
The dining room is warm and candlelit in winter, when the town is at its most atmospheric. In summer, outdoor seating is available. Booking ahead is advisable for dinner, particularly during the Christmas market period when the town fills up considerably.
