Coliba Haiducilor

Romania's most celebrated mountain restaurant, serving traditional food in a haiduc bandit setting

The Outlaws' Hut (Coliba Haiducilor in Romanian) has been serving traditional Romanian mountain food since the early 1980s, and regulars argue it is the best of its kind in the country. The décor leans heavily into the haiduc outlaw theme — rough-hewn wood, animal skins, folk artefacts on the walls — and the menu matches: sarmale (stuffed cabbage rolls), mici (grilled meat rolls), ciorbă de burtă (tripe soup, a hangover cure and national institution), and slow-braised lamb.

Portions are large and prices are very reasonable by Western standards. In ski season it gets busy on weekends; book ahead. The live folk music on weekend evenings makes for a noisy but entertaining dinner. Located in the middle of the resort village, walkable from most accommodation.

A story
The restaurant is named after the haiduci — the Romanian equivalent of Robin Hood figures, mountain bandits who robbed the Ottoman and Austro-Hungarian overlords and distributed wealth among the poor. The theme is not mere kitsch: in the Carpathian imagination the haiduci represent both Romanian resistance and the forest life of the mountains. Coliba Haiducilor has kept this romantic mythology alive through four decades of food service.
