Arzak

Arzak is the founding restaurant of modern Basque cuisine and, by many accounts, the most important restaurant in Spain for the past forty years. Juan Mari Arzak opened his kitchen in the 1970s and together with Pedro Subijana created what became known as Nueva Cocina Vasca — a movement that applied French nouvelle cuisine principles to Basque ingredients and traditions. His daughter Elena now runs the kitchen alongside him.

The restaurant has held three Michelin stars since 1989. The cooking is technically brilliant and playfully inventive: eggs cooked in sand, fish with seaweed emulsions, txakoli sorbet. The wine list is exceptional, with every serious Basque and Rioja producer represented. The dining room is warm and unfussy, which is part of the point — this is serious cooking without the solemnity. A meal here is expensive and requires booking months ahead, but it remains the reference point for understanding what Basque cooking has become.
