Casa Pancho on Calle San Lorenzo is the best-known tapas bar in central Burgos, and it earns the reputation. The morcilla croquetas are outstanding, and the sliced morcilla on bread with a drizzle of olive oil is the simplest and most satisfying thing on the menu.
The bar is busy from lunch through to dinner, the staff moves fast, and the atmosphere is purely local. Order at the bar, eat standing, and keep ordering drinks to keep the tapas coming. Prices are low even for Burgos: a round of drinks and tapas for two should come to €10-15.
