The restaurant that put nose-to-tail cooking on the map, and still one of the best in the city. Fergus Henderson's menu changes daily, but expect bone marrow with toast and parsley salad, roast bone marrow, devilled kidneys, ox heart. The room is white, austere, and surprisingly comfortable. The bread is exceptional. Lunch is slightly more manageable in price than dinner, and the bar snacks at the front are worth knowing about.
