Achiltibuie Smokehouse

The Achiltibuie Smokehouse is one of the finest artisan food producers on the Scottish northwest coast, smoking fish and shellfish caught from the surrounding waters. The salmon, in particular, has a reputation that reaches well beyond this corner of the Highlands. The smokehouse sells direct, and a side of smoked salmon makes a very practical souvenir given that it travels well.

The range typically includes smoked wild salmon, trout, and whatever shellfish is local and in season. Visiting in person is the best way to see what is available, as production is small-scale and stock varies. The smokehouse has a small shop on site and can also post orders. If you are driving all the way out here, leaving without something from the smokehouse would be an oversight.

The smokehouse uses traditional methods that take up to four days per salmon — cold-smoked over whisky-barrel oak chips at temperatures low enough that the fish is never cooked, only cured by the smoke.
