The Three Chimneys opened in a restored crofter's cottage at Colbost in 1985 and has been one of Scotland's best restaurants ever since. The cooking is built around Hebridean produce — Loch Dunvegan langoustines, Skye lamb, hand-dived scallops, foraged greens — and is served as a tasting menu or a shorter à la carte.
It is not cheap and you need to book well in advance, particularly in summer. The room itself is small and low-ceilinged, three thick-walled chimneys and a peat-and-stone interior; the experience of eating extremely good food in what is essentially a Hebridean cottage is part of what makes the place worth the journey.
