A few open-sided bars along Portobelo's waterfront look directly across the bay to the fort ruins — a view that costs nothing extra beyond the price of a cold Balboa. The experience is uncomplicated: plastic chairs, a cooler of beer, perhaps a speaker playing reggaeton or vallenato, and the slow light of late afternoon falling on the old stone walls across the water. Nobody is in a hurry.

These spots are at their liveliest during the October festival week, when the town fills up and the bars stay open past midnight. The rest of the year they empty out early, and by nine o'clock most of the town has gone quiet. Come at dusk, when the forts turn gold in the last light, and the evening feels worth the journey from anywhere.
