Roadside Lechoneras

The roads around Gurabo and the broader Cayey region are known across Puerto Rico for their roadside lechoneras — stalls and small restaurants specialising in whole-roasted pork. The tradition is especially strong along PR-184 near Guavate in the Cayey area, sometimes called the "Pork Highway," but the surrounding municipalities including Gurabo have their share of excellent examples.

Lechoneras are typically open on weekends only, from late morning until the pork runs out — and it does run out, usually by early afternoon. The pork is roasted on a spit over wood coals for hours, and when it's good it is very good: crackling skin, moist meat, served with rice, plantains, and pique (hot sauce). Go early, bring cash, and don't be in a hurry.
