Fort Collins has been called the craft beer capital of Colorado, and while Denver might dispute that claim, the density of quality breweries here is genuinely remarkable for a city of 165,000 people. There are over 20 craft breweries within city limits, and most have taprooms worth visiting.
Beyond New Belgium and Odell, look for Horse & Dragon Brewing (excellent IPAs and a large outdoor area), Snowbank Brewing (Colorado-focused beers in a relaxed taproom), and Equinox Brewing (Old Town location, reliable year-round range). The brewery scene is tight-knit and collaborative — staff at one taproom will happily recommend the next.
For coffee, Happy Lucky's Teahouse is a local institution for tea drinkers; Mugs Coffee Lounge is the student café of choice near CSU. Old Town has enough café options that you will not lack for a good espresso between brewery visits.
