Juan Chipoco's Peruvian restaurant in downtown Miami is widely considered one of the best ceviches in the city. The menu runs deep into Peruvian cuisine — tiraditos, causas, lomo saltado, anticuchos — but the ceviches are the star, with a dozen variations available. The dining room is stylish and always busy.
