The North Shore's food culture runs from the garlic shrimp trucks that line Kamehameha Highway between Haleiwa and Kahuku to full-service restaurants in Haleiwa town. The shrimp trucks are the defining culinary experience of the area — the shrimp, raised in aquaculture farms along the highway, is cooked in butter and garlic and served with two scoops of rice. Giovanni's Original White Shrimp Truck in Kahuku is the oldest and most famous, but several trucks maintain their own loyal followings. Plate lunches — protein with rice and macaroni salad — are available cheaply throughout the area.
