Northern New Mexico cuisine — green and red chile sauces, posole, blue corn tortillas, carne adovada — is different from what you find in Santa Fe's upscale restaurants or the Tex-Mex places down south. Española has some of the most authentic examples in the state. Ask for "Christmas" when ordering and you will get both red and green chile on your plate.
