The restaurant at The Maker, Hudson's most stylish boutique hotel, serves a seasonal American menu in a converted Victorian building on Warren Street. The dining room is handsome — exposed brick, warm lighting, carefully sourced tableware — and the kitchen takes a similar approach to ingredients, leaning on Hudson Valley farms and producers. Good choice for a relaxed dinner that doesn't require driving out of town. The hotel bar is also one of the better spots in Hudson for a cocktail.
