El Baqueano

One of Salta's better restaurants for traditional north-western Argentine cooking — the menu runs to locro (a hearty stew of maize, white beans, and meat, particularly good in winter), humitas (steamed maize parcels), tamales, and of course empanadas salteñas. The cooking is straightforward but careful, with good-quality ingredients.

The setting is an old colonial building with a courtyard. In summer, lunch in the courtyard under the fig tree is hard to beat. It is not the cheapest place in town but the quality is noticeably higher than the tourist-facing restaurants around the plaza.
