El Hueco is one of Tandil's better-known parillas, a short walk from the city centre, and representative of what the city does well: good beef from the surrounding pampa, cooked simply over a wood fire, with the emphasis on the quality of the meat rather than any particular technique. The asado de tira (short ribs) and the vacĂo (flank) are consistently good cuts to order; the wine list covers the expected Mendoza reds at reasonable prices. The room is straightforward and the service is matter-of-fact. Book ahead on weekends when Buenos Aires visitors fill the tables.
