Maranhão cuisine is one of the most distinctive regional cuisines in Brazil, drawing on indigenous, African, and Portuguese traditions. The signature dish is arroz de cuxá — rice cooked with a sauce of dried shrimp, sesame seeds, and vinagreira leaves. Seafood, especially crab and shrimp, is everywhere and excellent. The historic centre has a good range of restaurants, mostly serving regional food.
