Refined Fassi cuisine in an elegant riad with a serious wine list

One of the most respected restaurants in Fez, Dar Roumana occupies a beautifully restored riad in the medina and serves a contemporary take on Fassi cuisine — not the set-menu palace experience, but thoughtful cooking using traditional ingredients: saffron m'rouzia (slow-cooked lamb with honey and almonds), chicken bastilla with a properly thin warka pastry, and seasonal vegetable dishes. The menu changes with the market.

It runs as a proper restaurant with advance booking strongly advisable — not a place you walk into off the street. The wine list is one of the better Moroccan selections in the city, running to several good reds and whites from the Meknes region. The riad courtyard is the setting for dinner; lunch is also available. Expect to pay upmarket-restaurant prices, which are still modest by European standards.
