Eating Out

The food of the Swahili coast is a hybrid of Bantu African, Arab, Indian, and Portuguese cooking traditions, with the constant common ingredient being coconut. Most dishes can be tracked back to one or another of the trading peoples — pilau from Persia, biryani from India, samosas from the same source — but their Swahili versions are distinct.
