The Shunde district of Foshan has a genuine claim to being the culinary capital of Guangdong, which in competitive terms means the culinary capital of China. Double-skin milk, steamed freshwater fish, and braised dishes of startling complexity are the signatures. Central Foshan is more ordinary food-wise, but street food around the old Zumiao area runs to good Cantonese basics.
