Changwang Mian (Guiyang Rice Noodles)

Changwang mian is Guiyang's version of the breakfast noodle bowl that is a staple across southwest China. The Guiyang variant uses rice noodles in a broth that includes pig intestines (changwang means "intestines and stomach") and blood curd, seasoned with chilli oil, fermented black beans, and a garnish of peanuts and spring onion. It is emphatically not for cautious eaters, but it is the authentic morning meal of the city and it is excellent.

The noodle stalls serving changwang mian open from around 6:30am and close before noon; this is strictly a morning dish. The area around Hebin Park and the markets near Zhongshan Road have the highest concentration of traditional stalls. A bowl costs 10 to 15 yuan. If the full changwang version is too confronting, most stalls also serve a plainer rice noodle bowl (simian) in the same broth without offal.
