Guizhou cuisine is one of the most distinctive regional styles in China, and Guiyang is the best place to explore it. The food is built around sour fermented flavours — a result of the province's climate and the difficulty of preserving food in a mountainous, humid environment — combined with complex chilli-based heat. It is not the same as Sichuan food: the sourness is primary, not the numbness.
