Zhou Hei Ya — Zhou's Black Duck — is the Wuhan chain that took the city's traditional duck-neck snack and made it national. Founded in 1997, the brand specialises in marinated and braised duck, especially duck necks, wings, gizzards, and feet, all vacuum-sealed for snacking and sold from small kiosks across the city.
The product is spicy, fragrant, and quintessentially Wuhan — pick up a couple of packs at the Wuhan railway station or from a Hankou kiosk before getting on the high-speed train back to wherever you came from. Locals eat it with beer; foreigners often find the bones a challenge, but it is worth persevering.
