Jiujiang's food is shaped by its river and lake geography. Fresh Poyang Lake fish is the signature ingredient — silver carp, mandarin fish, and freshwater shrimp feature in most local restaurant menus. The city also produces sealed-jar rice wine (封缸酒), a sweet, amber-coloured wine aged in ceramic jars, which appears at most local tables as an aperitif.
