Doolan Restaurant

Doolan is the most well-known Uyghur restaurant in Kashgar and a reliable choice for a sit-down meal in the old town. The menu covers the full range of Xinjiang Uyghur cooking: dapanji (whole chicken braised with potato and green peppers in a red broth that arrives at the table in an enormous bowl), pilaf (polo) with carrot and lamb, and hand-pulled lagman noodles in a variety of sauces. The portions are large enough to share and the prices are modest.

The restaurant is larger than it looks from the street and can handle tour groups, but it doesn't feel like a tourist trap — locals eat here regularly and the food holds up. The lamb pilaf is the thing to order if you are eating alone or in a pair; the dapanji is better for a group and is genuinely good by any standard. The bread, baked fresh in a clay oven, arrives hot and is difficult to stop eating. There is no printed English menu but pointing at neighbouring tables works fine.
