Turpan eats Uyghur — hand-pulled lagman noodles, lamb kebabs grilled over open coals, polo (Uyghur pilaf with carrots and mutton), thin-walled samsa pastries baked stuck to the inside of a clay oven, and the city's famous grapes and raisins eaten with everything. The Uyghur night market on Wenhua Lu sets up most evenings and is the easiest place to graze widely on a small budget. A handful of Han Chinese restaurants serve standard regional fare.
