Agora is part restaurant, part training kitchen for young Timorese cooks, and the most ambitious place to eat in the city. The menu changes with what is in the market: a typical evening might offer buffalo rendang with foraged greens, a deconstructed take on ikan saboko, or sweet potato gnocchi with goats' cheese from Maubisse.
The dining room is in a converted timber-and-shade-cloth building behind a garden in Bidau Santana. Most diners eat from the tasting menu (about USD 25–30) but you can order à la carte. Reserve a day ahead — the room is small and fills with the city's diplomats and aid workers. Closed Sundays.
