Rahim's Nahari Kulcha

Rahim's, in the bazaar lanes off Akbari Gate, is the most famous of the dawn nihari-kulcha shops in Lucknow. Nihari is a slow-cooked lamb shank stew with a marrow-rich gravy, traditionally cooked overnight on low coals and served at dawn with kulcha — a soft, lightly leavened flatbread baked in a clay tandoor. It is winter food, deeply rib-sticking, and inseparable from old Lucknow's Muslim food culture.

Rahim's opens at around six in the morning and is largely sold out by ten. The shop is bare-bones — a counter, a few benches, and a stack of kulchas at the front — but the nihari is the platonic version of itself. Go early, share a portion if you are not used to spicy breakfasts, and combine it with a walking tour of Chowk.
