Warung Mak Beng has been serving the same single meal since 1941: a plate of crispy fried fish (white snapper), white rice, a clear fish-bone soup, and sambal matah. That's the entire menu. The fish comes out scalding hot in five minutes, the soup is sweetened with a sliver of palm sugar, and the sambal — raw shallots, lemongrass, chilli and lime — is one of the best in Bali.
