Sake tasting hall inside Niigata Station with 100+ local breweries

Right inside Niigata Station's Bandai exit is Ponshu-kan, one of the most entertaining sake experiences in Japan. Insert a 100-yen coin, select one of the nearly 100 sake vending machines representing every brewery in Niigata prefecture, and receive a small ochoko cup and a sample. The system is entirely analogue and thoroughly democratic: local breweries you'd never find in Tokyo sit alongside famous labels like Kubota and Hakkaisan.

The tasting hall also stocks pickled vegetables and local snacks to accompany your rounds. Most visitors end up spending considerably more time (and yen) than intended. Ponshu-kan is open daily and makes an excellent first or last stop in Niigata.

A story
Niigata prefecture has nearly a hundred sake breweries — more than almost any other prefecture in Japan — and the reason is geology. The heavy snowpack that buries the Echigo mountains each winter melts slowly through layers of rock, producing extremely soft, low-mineral water. Combined with the region's famous Koshihikari rice, this water produces sake that is distinctively dry, smooth, and clean — what brewers call tanrei karakuchi.
