A long-established fugu restaurant in the Karato waterfront district, the kind of place that has been serving the city's signature dish for generations. The tessa (fugu sashimi) is sliced paper-thin and fanned across a hand-painted plate; the chirinabe hot pot comes with ponzu dipping sauce and a clear broth that deepens as the meal goes on. Set menus start at around 5,000 yen at lunch and rise steeply for dinner courses — lunch is the better value. Book ahead during fugu season (October–March).
