La Paz Market is a large public market in the La Paz district, northwest of the Iloilo city centre, and the original home of la paz batchoy — the noodle soup that put Iloilo on the Filipino food map. The market is busy from early morning with fresh produce, meat, fish, and cooked food stalls, but the main reason to come is Ted's La Paz Batchoy, the original restaurant founded by Federico Guillergan in the 1940s at a stall inside the market.
The batchoy here is made with the original recipe: round egg noodles in a rich pork stock with pork offal (liver, kidney, heart), chopped fresh pork, and a topping of crushed chicharron and spring onion. A raw egg is added to the bowl and stirred in by the diner. The flavour is intense and the dish is a full breakfast or lunch in itself. Go in the morning when the stock is freshest. The market around it is worth exploring for fresh produce and local snacks.
