Zamboanga's food is a layered Spanish-Filipino-Muslim cuisine you will not find elsewhere in the Philippines. The signatures are seafood (the strait is a rich fishing ground), Chavacano-Spanish-influenced dishes like paella zamboangueña and estofado, and Muslim-Tausug specialties such as satti (skewered grilled meat in a spicy sauce) and tiyula itum (a deep black beef soup coloured with burnt coconut).
