Pamukkale is two sights in one: the famous white travertine terraces tumbling down the hillside, and the extensive Greco-Roman ruins of Hierapolis spread out across the plateau above them. Allow most of a day. Walk barefoot down (or up) the calcium pools, swim in the Sacred Pool among submerged Roman columns, see the well-preserved theatre, the eerie Ploutonion gateway, and the vast necropolis. If you have a car, the lesser-known ruins of Laodicea — a major early Christian city — are twenty minutes south and almost always empty.
