Sevan Trout (Ishkhan)

Ishkhan — Armenian trout, also called Sevan trout — is the regional dish and the reason to eat here rather than back in Yerevan. The species is endemic to Lake Sevan; it exists nowhere else in the world. It is grilled whole and served at lakeside restaurants, usually with bread and herbs and little else to distract from the fish.

Available at most lakeside restaurants from May through September. It is on the expensive side by Armenian standards but worth ordering. Look for it on any menu along the shore — if they are near the lake, they will have it.
