Joseph Drouhin is one of Burgundy's most respected négociants and domaine owners, founded in 1880 and still family-run. Their cellars in central Beaune are among the most historically significant in the region — they run beneath the old town and incorporate 12th-century sections that once formed part of the fortifications of the Dukes of Burgundy, as well as a Roman road that still runs through the deepest section.
Cellar tours can be booked in advance and are led by knowledgeable staff who explain the difference between the négociant model (buying grapes or wine from growers) and the domaine model (estate-grown). The tasting at the end covers a range from village appellations up through premier and grand crus. Drouhin is particularly known for its Clos des Mouches premier cru — both red and white versions.
