The Saturday market is Pézenas at its best — a full-day affair with produce, local cheeses, oysters, wines, and pastries. The Petit Paté de Pézenas (a small lamb pie flavoured with lemon and spices) is available at all local bakeries and keeps refrigerated for two weeks. Molière mugs aside, the town has a genuine concentration of working artisans — potters, jewellers, glass blowers, leather workers — whose ateliers display the sign "Je conçois, je fabrique dans mon atelier" to indicate work made on the premises. Many stay open late on Wednesday and Friday evenings in summer.
